Step-by-Step Instructions
  1. Pulse the shallot, jalapeño, and garlic in a food processor until finely chopped.
  2. Combine the mixture with chopped tomato, diced avocado, salt, lime juice, and cilantro in a bowl and stir well.
  3. In a separate bowl, drizzle shrimp with olive oil, chili powder, cayenne, and salt; toss to coat and let marinate for 10 minutes.
  4. Preheat grill or skillet over medium-high heat and cook shrimp for 1½ to 2 minutes on each side.
  5. Warm tortillas on the grill or in a skillet for about 30 seconds on each side.
