  • 1 tablespoon dried oregano fresh works too, use less
  • ½ teaspoon red pepper flakes omit for milder flavor
  • 1 teaspoon kosher salt or regular salt
Salad
  • 12 ounces cheese tortellini gluten-free option available
  • 1 cup pepperoncini or olives as alternative
  • 1 cup grated Parmesan cheese can substitute with Pecorino Romano
  • ½ cup diced red onion or use green onions for milder taste
  • 1 cup halved cherry tomatoes or diced cucumbers
  • 1 cup pepperoni omit for vegetarian version
  • 1 cup salami omit or use vegan options
  • 1 cup deli ham omit for vegetarian option

Method
 

Dressing Preparation
  1. In a large mixing bowl, whisk together mayonnaise, red wine vinegar, garlic powder, black pepper, dried oregano, red pepper flakes, and kosher salt until smooth and creamy.
Cook Tortellini
  1. Bring a pot of salted water to a boil and cook cheese tortellini according to package instructions until al dente, about 3-5 minutes. Drain and rinse under cold water.
Combine Ingredients
  1. Gently fold the cooled tortellini into the dressing until coated. Add pepperoncini, Parmesan, red onion, cherry tomatoes, and assorted meats. Mix carefully.
Chill Salad
  1. Cover with plastic wrap or transfer to an airtight container. Refrigerate for at least 1 hour to let flavors meld.
Serve
  1. After chilling, stir gently. Serve in bowls or a platter, garnishing with extra Parmesan or fresh herbs.
