  • 1 can Rotel Tomatoes Or equivalent diced tomatoes with green chilies
  • 1 medium Bell Pepper Any color, diced
  • 1 cup Shredded Cheddar Cheese Or any cheese of your choice
  • 2 cups Fritos Add just before serving
For the Dressing
  • 1 cup Sour Cream
  • 2 tablespoons Olive Oil Can be substituted with avocado oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder Or fresh minced garlic
  • 1 teaspoon Onion Powder
  • 1 teaspoon Cumin Adjust based on preference

Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, whisk together sour cream, olive oil, salt, black pepper, garlic powder, onion powder, and cumin until smooth.
  2. In a large mixing bowl, combine drained sweet corn, rinsed black beans, Rotel tomatoes, and diced bell pepper. Fold gently to mix.
  3. Pour the dressing over the salad mixture and stir gently until all ingredients are coated.
  4. Just before serving, gently fold in the Fritos to maintain their crunch.
