Preparation Steps
  1. Begin by patting the sea bass fillet dry and cutting it into portions. Season each piece generously with salt and pepper, and allow to rest at room temperature for 15 minutes.
  2. While the fish marinates, heat a large skillet over medium-high heat. Add enough cooking oil to coat the bottom generously. Wait for the oil to shimmer, about 3-4 minutes.
  3. Carefully add the marinated sea bass to the hot skillet. Fry for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes. Remove from skillet.
  4. In the same skillet, reduce heat slightly, and add minced ginger and garlic. Sauté for 30 seconds until fragrant and golden.
  5. Stir in chopped green onions and cook for another 30 seconds until tender.
  6. Return the crispy sea bass to the skillet, drizzle with soy sauce, oyster sauce, and sprinkle with sugar. Toss everything for 1 minute.
  7. Adjust seasoning with additional salt and pepper if needed. Serve the dish warm, garnished with extra green onions.
