  • 1 can Crushed Pineapple undrained
  • 1 bottle Liquid Pectin follow package instructions

  1. Begin by selecting ripe kiwifruit, peel and thinly slice, then chop into small pieces.
  2. In a large bowl, combine chopped kiwi, undrained crushed pineapple, freshly squeezed lime juice, and granulated sugar. Mix until sugar is dissolved.
  3. Place the bowl in the microwave and heat on high for 10-12 minutes, stirring every 2 minutes.
  4. After removing from microwave, stir in liquid pectin and food coloring, mixing until well incorporated.
  5. Pour the hot jelly into sterilized jars, cool to room temperature on the counter, then cover and let sit overnight.
