  • 1 lb Ground Beef or substitute with ground lamb or turkey
  • 3 cloves Garlic, minced fresh or roasted
  • 2 medium Onions, finely minced or blended, shallots can be used
  • 2 tbsp Breadcrumbs gluten-free option available
  • 1 tsp Baking Soda do not omit
  • 1 cup Fresh Herbs, finely chopped parsley, mint, coriander or substitute
  • 1 tbsp Olive Oil or avocado oil
  • ½ tsp Salt plus more to taste
  • 1 tsp Black Pepper freshly ground preferred
For the Roasted Potatoes
  • 6 medium Potatoes, cut into wedges yams or sweet potatoes can be substituted
  • ½ tsp Cumin
  • ½ tsp Paprika smoked paprika for a twist
  • ½ tsp Oregano
  • 2 tbsp Olive Oil or avocado oil
For the Tzatziki
  • 1 cup Thick Greek Yogurt or dairy-free yogurt for vegan
  • ½ Cucumber, grated and drained English cucumbers preferred
  • 1 tbsp Lemon Juice or vinegar if unavailable
  • 0.3 cup Fresh Dill or Mint, chopped any fresh herb can work as substitute
  • 1 tbsp Olive Oil reduce for lighter version
  • to taste Salt
For the Salad
  • 2 cups Lettuce Leaves, roughly chopped or spinach
  • 2 medium Tomatoes, chopped or cherry tomatoes
  • 2 Cucumbers, chopped mix varieties for texture
  • ½ Red Onion, chopped reduce for milder flavor
  • ½ cup Kalamata Olives, pitted and halved or black olives
  • Extra Fresh Herbs for garnish

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground beef, minced garlic, finely minced onions, breadcrumbs, baking soda, chopped fresh herbs, olive oil, salt, and black pepper. Mix until just combined and refrigerate for 2 hours.
  2. Preheat your oven to 425°F (220°C). Arrange the meatballs on a baking sheet lined with parchment paper, ensuring they are evenly spaced. Bake for 30-40 minutes until browned.
  3. Prepare the roasted potatoes by tossing them with olive oil, salt, cumin, paprika, oregano, and freshly ground pepper. Roast in the same oven for 40-60 minutes.
  4. To make tzatziki, mix together thick Greek yogurt, grated cucumber, lemon juice, dill or mint, olive oil, and salt. Chill until serving.
  5. Assemble your Greek Meatball Bowl with a base of lettuce, topped with roasted potatoes, tender meatballs, vibrant salad, and tzatziki.
