  • 4 pieces Pork Chops Bone-in preferred
  • 1 cup Cherry Tomatoes Can substitute with sun-dried tomatoes
  • 2 pieces Shallots Can substitute with red onions

Method
 

Step‑by‑Step Instructions
  1. In a small bowl, whisk together olive oil, minced garlic, dried oregano, dried basil, dried parsley, crushed red pepper flakes if desired, salt, and black pepper.
  2. Rub the prepared marinade generously over each pork chop and refrigerate for a minimum of 30 minutes.
  3. Preheat your grill to medium-high heat around 450°F (230°C) and oil the grates.
  4. Grill the marinated pork chops for about 4-5 minutes without flipping.
  5. Flip the chops and top each with cheese, halved cherry tomatoes, and shallots, then grill for an additional 4-6 minutes.
  6. Remove the pork chops from the grill and let them rest for about 5 minutes.
  7. Serve with an optional sprinkle of fresh rosemary and your choice of sides.
