  • 1 cup Low-sodium Chicken Broth Swap with vegetable broth for a vegetarian option.
For the Toppings
  • 1 cup Shredded Mozzarella Cheese Opt for gluten-free cheese if needed.
  • 1/2 cup Grated Parmesan Cheese Gluten-free versions available.
For Sautéing
  • 1 tablespoon Olive Oil Can substitute with avocado oil.
For Seasoning
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for 5-7 minutes until browned and cooked through, then set aside.
  3. Sauté the onion and garlic in the same skillet for about 3 minutes until translucent.
  4. Stir in the cauliflower rice, broccoli, and bell peppers, cooking for another 5 minutes until tender.
  5. Combine the sautéed chicken, chicken broth, and seasonings in the skillet, mixing well.
  6. Transfer the mixture to a greased 9x13 inch baking dish.
  7. Sprinkle the mozzarella and Parmesan cheese over the top of the casserole.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
  9. Remove from the oven and let sit for 5 minutes before serving.
  10. Garnish with freshly chopped parsley before serving.
