- Heat olive oil in a large skillet over medium heat. Add ground beef, breaking it up as it cooks for about 5 minutes until browned.
- Add minced onion and diced bell pepper. Season with salt and pepper, and sauté for 4-5 minutes until softened.
- Stir in tomato sauce, ketchup, water, maple syrup, vinegar, and chili powder. Mix thoroughly.
- Increase heat until mixture boils, then reduce to low. Cover and simmer for 10 minutes, stirring occasionally.
- Taste and adjust seasoning before serving on gluten-free buns or over sweet potatoes.
