  • 8 ounces Cream Cheese softened
  • 1/4 cups Powdered Sugar adjust based on apricot sweetness
  • 1 teaspoon Vanilla Extract use pure for best flavor

  • 1 package Puff Pastry store-bought
  • 1 large Egg for egg wash
  • 1 tablespoon Flour for dusting

Method
 

Step‑by‑Step Instructions
  1. Wash the apricots, then halve, pit, and cube them into small pieces. Set aside.
  2. In a bowl, combine cream cheese, powdered sugar, and vanilla extract. Mix until smooth.
  3. Dust your work surface with flour, unroll puff pastry, and roll into a 10.5-inch square. Cut into 9 squares.
  4. Place filling and apricot pieces in the center of each square, fold and seal corners tightly.
  5. Place pastries on a lined baking sheet, cover with plastic wrap and chill in the freezer for 30 minutes.
  6. Preheat oven to 400°F (200°C). Brush pastries with egg wash. Bake for 25-30 minutes until golden brown.
  7. Allow to cool slightly before dusting with powdered sugar and serving warm.
