- In a medium bowl, combine warm milk, one tablespoon of sugar, and active dry yeast. Stir gently and let sit for about 10 minutes until foamy.
- Add the remaining sugar, all-purpose flour, bread flour, salt, egg yolks, whole eggs, unsalted butter, and vanilla extract. Stir until a soft dough forms.
- Transfer to a lightly oiled surface and knead for about 5 minutes until smooth and elastic.
- Shape into a ball, place in a greased bowl, cover, and let rise for 1 to 2 hours until doubled in size.
- Punch down the dough gently, roll it out to about 1-inch thickness, and cut out donut shapes.
- Place cut donuts on a parchment-lined baking sheet, cover with a towel, and let proof for another 30 minutes.
- Heat oil in a pot to 360°F-370°F.
- Lower the proofed donuts into hot oil in small batches, frying for 1 to 2 minutes on each side until golden brown.
- Remove donuts and let them drain on paper towels. Toss each warm donut in cinnamon sugar.
