- Wash and chop approximately four medium fresh peaches, removing the pits but keeping the skin on.
- In a medium saucepan, combine chopped peaches with cold water and sugar. Heat over medium heat until boiling, then reduce to a simmer for 5-7 minutes.
- Remove from heat and let cool for about 10 minutes. Then chill in the refrigerator for an additional 30-45 minutes.
- Strain the cooled peach mixture through a fine mesh sieve into a large bowl or pitcher, pressing down on the solids to extract juice.
- Stir in lemon juice and remaining cold water, mixing well until combined.
- Pour the lemonade over ice and garnish with fresh mint leaves and peach slices.
