  • 8 ounces Barilla Penne Any pasta works as long as it's cooked al dente.
For the Crab Filling
  • 1 cup Lump Crab Meat Ensure canned crab is well-drained.
  • 1 cup Sour Cream Daisy brand preferred for its consistency.
For the Vegetables
  • 1 Bell Pepper Any color works or omit if desired.
  • 1 medium Onion Yellow onion is best; use shallots if needed.
For Cooking
  • 2 tablespoons Unsalted Butter Olive oil is a great dairy-free option.
For Seasoning
  • 1 teaspoon Oregano
  • 1/2 teaspoon Garlic Powder
  • Salt & Pepper Adjust to taste.
  • 1 dash Smoked Paprika
For the Cheese Topping
  • 1 cup Swiss Cheese Fresh cheese melts better than pre-shredded.
  • 1 cup Cheddar Cheese Fresh cheese melts better than pre-shredded.
For Garnish
  • 1/4 cup Green Onion Feel free to substitute with fresh parsley.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Bring a large pot of salted water to a vigorous boil and add your choice of pasta, cooking until al dente for 8-10 minutes. Drain and set aside.
  3. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add diced onions and bell peppers, sautéing for 5-7 minutes until soft.
  4. Stir in 1 teaspoon of oregano, 1/2 teaspoon of garlic powder, salt and pepper to taste, and a dash of smoked paprika. Cook for an additional 30 seconds.
  5. In a mixing bowl, combine the cooked pasta with the sautéed vegetables, 1 cup of lump crab meat, and 1 cup of sour cream. Mix until well incorporated.
  6. Transfer the pasta mixture into a greased 9x13 inch baking dish. Spread it evenly and top with the cheese.
  7. Bake in the preheated oven for 20 minutes until the cheese is melted and bubbly.
  8. Let the dish rest for 5-10 minutes and garnish with fresh chopped green onions before serving.
