Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather your ingredients.
  2. In a large mixing bowl, combine 1 ½ cups of all-purpose flour and ½ cup of powdered sugar. Cut in 1 cup of cold butter cubes until crumbly, then press into the greased baking dish.
  3. Bake the crust for 15 minutes until lightly golden.
  4. In a medium bowl, toss 2 cups of chopped rhubarb with 1 cup of granulated sugar. In a separate bowl, beat 2 eggs with ¼ cup of flour and ½ teaspoon of vanilla extract, then combine with the rhubarb.
