Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Rinse sushi rice under cold water until clear. Cook with water in a rice cooker or pot.
  3. Mix rice vinegar, sugar, and salt until sugar dissolves. Fold into cooked rice and cool.
  4. Combine diced salmon, mayonnaise, sriracha, sesame oil, and chopped green onions.
  5. Spread seasoned rice in a baking dish, layer salmon mixture on top.
  6. Bake for 25-30 minutes until cooked through and golden on top.
  7. Let cool for 5 minutes, garnish with green onions, nori strips, and tobiko.
  8. Serve warm family-style with pickled ginger and soy sauce.
