Step-by-Step Instructions for Decadent Strawberry Earthquake Cake
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan with butter or non-stick spray.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 ½ cups of granulated sugar, 1 tablespoon of baking powder, and ½ teaspoon of salt.
- In another bowl, cream together ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy. Beat in 3 large eggs, one at a time, along with 1 teaspoon of vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- In a separate bowl, beat together 8 ounces of cream cheese and ½ cup of sugar, adding another splash of vanilla extract until smooth and creamy.
- Pour half of the prepared batter into the greased cake pan, then dollop the cream cheese mixture and sprinkle in 1-2 cups of strawberries, followed by the remaining batter.
- Bake for about 60 minutes or until golden brown and a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
Avoid overmixing to keep the cake fluffy. Use room temperature ingredients for better mixing and don't skip the cooling step for best results.
