- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the oat flour, rolled oats, baking soda, baking powder, salt, ground cinnamon, and optional chocolate chips. Whisk until well combined.
- In a separate bowl, mash about four medium-sized bananas until smooth. Add the pure maple syrup, melted coconut oil, and pure vanilla extract. Mix until smooth and creamy.
- Slowly pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined. Stop once no dry flour remains visible.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle extra chocolate chips on top if desired.
- Bake in the preheated oven for about 35 minutes. Check for doneness with a toothpick; it should come out mostly clean.
- Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
