Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the oat flour, rolled oats, baking soda, baking powder, salt, ground cinnamon, and optional chocolate chips. Whisk until well combined.
  3. In a separate bowl, mash about four medium-sized bananas until smooth. Add the pure maple syrup, melted coconut oil, and pure vanilla extract. Mix until smooth and creamy.
  4. Slowly pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined. Stop once no dry flour remains visible.
  5. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle extra chocolate chips on top if desired.
  6. Bake in the preheated oven for about 35 minutes. Check for doneness with a toothpick; it should come out mostly clean.
  7. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
