- Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan.
- In a bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add this mixture to the wet ingredients.
- Fold in mashed bananas, sour cream, and vanilla extract until combined.
- If using, add walnuts and mix gently.
- Pour batter into the greased pan filling it about 3/4 full.
- Bake for 50-55 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
