Method
 

Preparation and Cooking
  1. In a large bowl, combine minced garlic, olive oil, fresh orange juice, lime juice, ground cumin, oregano, salt, black pepper, and smoked paprika to create a fragrant marinade.
  2. Place the pork shoulder in a resealable bag or a shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat your oven to 325°F (165°C) about 30 minutes before roasting.
  4. Remove the pork from the marinade and place it in a roasting pan, fat side up. Roast for 3 to 4 hours, basting occasionally with reserved marinade.
  5. Let the pork rest for 15 minutes before slicing or shredding, then serve with rice, black beans, and fried plantains.
