  • 2 cups Butternut Squash Peeled and sliced
  • 1 cup Carrots Peeled and sliced
Cheese Layer
  • 1 cup Feta Cheese Crumbled

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Peel and slice sweet potatoes, butternut squash, and carrots into thin layers.
  2. In a medium saucepan, combine cranberry juice, honey, and vinegar, and simmer until thickened.
  3. Grease a baking dish and layer the sweet potatoes, butternut squash, carrots, feta, and walnuts, drizzling glaze in between.
  4. Cover with foil and bake for 40 minutes, then uncover and bake for an additional 15 minutes until golden brown.
  5. Let the lasagna rest for 10 minutes before slicing and serving.
