Preparation Steps
  1. In a medium bowl, whisk together chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt until smooth and well combined.
  2. Cover the bowl with plastic wrap and refrigerate for at least 3 hours until thickened.
  3. Soak the raw cashews in hot water for 1 hour, then drain.
  4. Blend soaked cashews, oat milk, lemon juice, maple syrup, turmeric, and optional lemon extract until smooth.
  5. Divide the thickened chia mixture among serving jars or bowls.
  6. Pour the lemon cream mixture gently over the chia layer.
  7. Cover jars loosely and refrigerate for at least 3 more hours.
  8. Optionally top with fresh fruit before serving.
