Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add your lean ground beef and cook for about 5-7 minutes until browned, then add diced onion and minced garlic, cooking for an additional 3-4 minutes. Stir in the taco seasoning, salt, and black pepper, and simmer for an additional minute.
  3. On your baking sheet, start with one tortilla as the base and spread a layer of refried beans over it. Add a portion of the seasoned beef mixture, then place another tortilla on top.
  4. Sprinkle cheddar cheese over the second tortilla, then top with diced tomatoes.
  5. Bake for about 10-15 minutes, or until the cheese is melted and bubbly.
