- Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a medium skillet, heat a drizzle of olive oil over medium heat. Add spinach and sauté for about 3-4 minutes until wilted. Remove from heat and cool slightly.
- In a mixing bowl, combine spinach, ricotta, Parmesan, garlic powder, and salt and pepper until smooth.
- On a floured surface, unfold the puff pastry sheets and cut each into 4-6 squares.
- Place 1-2 tablespoons of filling in the center of each square, fold over, and seal edges with a fork.
- Beat the egg for an egg wash and brush the tops of the pastries.
- Place pastries on the baking sheet and bake for 20-25 minutes until golden brown.
- Cool on the baking sheet for about 5 minutes before serving.
