  • 2 cups Fresh Spinach or baby kale or Swiss chard
  • 1 cup Ricotta Cheese or cottage cheese for lower fat
  • 1/2 cup Parmesan Cheese or Pecorino Romano
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • to taste Salt & Pepper
For the Glaze
  • 1 Egg (beaten)
Optional Enhancements
  • 1 tablespoon Olive Oil for sautéing spinach

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a medium skillet, heat a drizzle of olive oil over medium heat. Add spinach and sauté for about 3-4 minutes until wilted. Remove from heat and cool slightly.
  3. In a mixing bowl, combine spinach, ricotta, Parmesan, garlic powder, and salt and pepper until smooth.
  4. On a floured surface, unfold the puff pastry sheets and cut each into 4-6 squares.
  5. Place 1-2 tablespoons of filling in the center of each square, fold over, and seal edges with a fork.
  6. Beat the egg for an egg wash and brush the tops of the pastries.
  7. Place pastries on the baking sheet and bake for 20-25 minutes until golden brown.
  8. Cool on the baking sheet for about 5 minutes before serving.
