Step-by-Step Instructions
  1. Begin by prepping all your ingredients for the Mediterranean Chicken Stir Fry. Cut the chicken breasts into bite-sized pieces, ensuring uniform size for even cooking. Chop the zucchini, bell peppers, and red onion, and halve the cherry tomatoes. Mince the garlic cloves.
  2. In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Once the oil shimmers, add the chicken pieces in a single layer. Cook for about 5-7 minutes until the chicken is golden brown and reaches an internal temperature of 165°F. Transfer cooked chicken to a plate and set aside.
  3. With the skillet still on medium-high heat, add the remaining olive oil and toss in the chopped red onion and minced garlic. Sauté for 2-3 minutes until the onion softens and becomes translucent. Next, add the zucchini and bell peppers, stirring frequently and cooking until they are slightly tender, about 4-5 minutes.
  4. Return the cooked chicken to the skillet with the sautéed vegetables. Sprinkle in the dried oregano, basil, and thyme, along with salt and black pepper to taste. Stir everything together and let it cook for another 2-3 minutes.
  5. Just before serving, drizzle in fresh lemon juice and mix in the Kalamata olives and cherry tomatoes. Allow the mixture to cook for an additional minute, ensuring the tomatoes stay juicy. Finally, remove from heat and sprinkle crumbled feta cheese on top.
