Ingredients
  

For the Patties
  • 1 pound Ground Chicken or ground turkey
  • 0.5 cup Fresh Parsley chopped
  • 0.25 cup Fresh Dill chopped
  • 0.5 cup Breadcrumbs omit for gluten-free
  • 1 large Egg
  • 0.5 cup Red Onion finely chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Oregano
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Tzatziki
  • 1 cup Greek Yogurt or coconut yogurt
  • 0.5 cup Cucumber finely diced and moisture squeezed out
  • 1 clove Garlic minced
  • 0.5 large Lemon Juice juiced
  • 1 tablespoon Olive Oil extra virgin recommended
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Salad
  • 2 cups Fresh Spinach
  • 1 cup Diced Cucumber
  • 1 cup Halved Cherry Tomatoes
  • 0.5 cup Sliced Kalamata Olives
  • Dressing made from olive oil and lemon juice, season to taste

Method
 

Prepare Tzatziki
  1. Mix Greek yogurt, diced cucumber, garlic, dill, lemon juice, and olive oil in a bowl. Season with salt and pepper. Refrigerate for 30 minutes.
Mix Chicken Patty Ingredients
  1. In a large mixing bowl, combine ground chicken, red onion, garlic, parsley, and dill. Add the egg, breadcrumbs, salt, and pepper. Mix gently.
Form Patties
  1. Divide the mixture into equal portions and shape into patties. Chill in the refrigerator for 15 minutes.
Cook Patties
  1. Heat olive oil in a skillet. Cook patties for 5-6 minutes on each side until golden brown and thoroughly cooked.
Prepare Salad
  1. Combine spinach, cucumber, cherry tomatoes, and olives in a bowl. Drizzle with dressing and toss well.
Serve
  1. Serve the salad topped with chicken patties and a dollop of tzatziki.
