Step‑by‑Step Instructions
  1. Prepare the Salmon: Cook fresh salmon in a skillet over medium heat for 5-7 minutes, then flake, or drain and flake canned salmon.
  2. Combine the Ingredients: In a bowl, mix flaked salmon, beaten egg, breadcrumbs, parsley, garlic, onion, zest, lemon juice, oregano, red pepper flakes, salt, and pepper.
  3. Form the Patties: Shape mixture into 4-6 patties, about ¾ inch thick. Adjust with breadcrumbs or lemon juice as needed.
  4. Chill the Patties: Refrigerate shaped patties for 15-20 minutes to firm up.
  5. Heat the Skillet: Heat olive oil in a skillet over medium heat until shimmering.
  6. Cook the Patties: Fry patties for 3-4 minutes on each side until golden brown.
