- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add 1 pound of ground beef, and cook for about 5-7 minutes or until browned.
- Stir in chunky salsa and cook for an additional 2-3 minutes.
- Spread a thin layer of red enchilada sauce on the bottom of a 9x13-inch baking dish.
- Spoon some of the beef mixture onto each tortilla, roll it tightly, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top of the rolled enchiladas and sprinkle cheese on top.
- Cover with foil and bake for 25 minutes, then remove foil and bake uncovered for an additional 10 minutes.
- Let cool for a few minutes before serving warm.
