For the Topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add 1 pound of ground beef, and cook for about 5-7 minutes or until browned.
  3. Stir in chunky salsa and cook for an additional 2-3 minutes.
  4. Spread a thin layer of red enchilada sauce on the bottom of a 9x13-inch baking dish.
  5. Spoon some of the beef mixture onto each tortilla, roll it tightly, and place seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the top of the rolled enchiladas and sprinkle cheese on top.
  7. Cover with foil and bake for 25 minutes, then remove foil and bake uncovered for an additional 10 minutes.
  8. Let cool for a few minutes before serving warm.
