Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Cut the chicken breasts in half horizontally to create thinner cutlets and pound to uniform thickness.
  3. Whisk together olive oil, minced garlic, Italian seasoning, salt, and black pepper. Marinate the chicken cutlets for 15–30 minutes.
  4. Sauté fresh spinach in olive oil for 2–3 minutes until wilted. Set aside to cool.
  5. Beat the cream cheese until smooth, mix in the sautéed spinach and half of the shredded mozzarella cheese.
  6. Optionally, sear the marinated chicken cutlets for 1-2 minutes per side until golden brown.
  7. Arrange chicken cutlets in the baking dish, spread the cream cheese mixture on top, and sprinkle with remaining mozzarella cheese.
  8. Bake for 20–30 minutes until chicken reaches an internal temperature of 165°F (75°C) and cheese is melted.
