- Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- Cut the chicken breasts in half horizontally to create thinner cutlets and pound to uniform thickness.
- Whisk together olive oil, minced garlic, Italian seasoning, salt, and black pepper. Marinate the chicken cutlets for 15–30 minutes.
- Sauté fresh spinach in olive oil for 2–3 minutes until wilted. Set aside to cool.
- Beat the cream cheese until smooth, mix in the sautéed spinach and half of the shredded mozzarella cheese.
- Optionally, sear the marinated chicken cutlets for 1-2 minutes per side until golden brown.
- Arrange chicken cutlets in the baking dish, spread the cream cheese mixture on top, and sprinkle with remaining mozzarella cheese.
- Bake for 20–30 minutes until chicken reaches an internal temperature of 165°F (75°C) and cheese is melted.
- Let the casserole rest for 5 minutes before serving.
