Step-by-Step Instructions for Mini Meatloaf
  1. Preheat your oven to 350°F (175°C) and spray a muffin tin with nonstick cooking spray or line it with muffin liners.
  2. In a large mixing bowl, combine the ground beef, onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and half of the ketchup. Mix gently until just combined.
  3. Scoop the mixture into each muffin cup, filling them about three-quarters full.
  4. In a small bowl, whisk together the remaining ketchup, brown sugar, and mustard for the glaze. Spoon the glaze over the filled muffin cups.
  5. Bake for approximately 30 minutes, until cooked through and golden on top. Use a meat thermometer to check for 160°F (71°C) internal temperature.
  6. Let them cool in the pan for about 5 minutes, then carefully lift them out and serve warm.
