  • 3-4 medium Mashed Bananas overripe
For the Cream Cheese Frosting
  • 8 ounce Cream Cheese full-fat
  • 2 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • as needed Milk to adjust consistency

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 baking dish.

  3. Mix in the large eggs, full-fat sour cream, and vanilla extract until smooth.
  4. Gradually sift in the all-purpose flour, baking soda, and salt, stirring until just combined.
  5. Gently fold in the mashed bananas until evenly distributed in the batter.
  6. Pour the batter into the prepared baking dish, spreading it evenly.
  7. Bake for 25-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the dish for about 10 minutes, then transfer to a wire rack to cool completely before frosting.
Frosting
  1. In a mixing bowl, beat the cream cheese until smooth, then gradually add the powdered sugar.
  2. Mix in the vanilla extract and milk as needed until you reach the desired consistency for spreading.
