Step-by-Step Instructions
- Begin by slicing the chicken breasts into 1-inch strips, and then slice the red, yellow, and green bell peppers, alongside the yellow onion. For an aromatic kick, mince the garlic cloves.
- Pour half of the salsa into the bottom of your slow cooker, creating a moist base for the fajitas.
- Layer half of the sliced bell peppers and onions over the salsa, followed by all the minced garlic.
- Evenly place the sliced chicken on top of the vegetable layer.
- Sprinkle the fajita seasoning and chili powder over the chicken, mixing lightly to ensure every strip is coated.
- Carefully layer the remaining salsa, bell peppers, and onions on top of the chicken. Squeeze the lime juice over the top.
- Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, use two forks to shred the chicken right inside the crockpot.
- Switch the crockpot to the warm setting until you’re ready to serve.

Notes
For best results, check early to prevent overcooking the chicken and adjust the seasonings to your taste preferences.
