Ingredients

For the Fajitas
  • 24 oz salsa Base for moisture and flavor; you can use homemade salsa for a personal touch.
  • 1 red bell pepper (sliced) Adds sweetness and crunch; feel free to swap in any bell pepper color.
  • 1 yellow bell pepper (sliced) Balances flavors while adding beautiful color; substitute with orange or another variety if desired.
  • 1 green bell pepper (sliced) Contributes slight bitterness that complements the others’ sweetness.
  • 1 large yellow onion (thinly sliced) Provides depth of flavor; consider using red onion for a sharper taste.
  • 6 cloves garlic (minced) Enhances aroma and taste; garlic powder works as a substitute when fresh isn’t available.
  • 2 lb chicken breast (sliced into 1-inch strips) Your main protein source for lean meat; chicken thighs are a flavorful alternative.
  • 1 packet fajita seasoning Infuses classic spices into the dish; you can make your own for more control over ingredients.
  • 2 tbsp lime juice Brightens flavors; remember to add it at the end to avoid toughness in the chicken.
  • 1 teaspoon chili powder Adds warmth and depth; adjust based on your heat preference.

Equipment

  • Slow Cooker

Method

Step-by-Step Instructions
  1. Begin by slicing the chicken breasts into 1-inch strips, and then slice the red, yellow, and green bell peppers, alongside the yellow onion. For an aromatic kick, mince the garlic cloves.
  2. Pour half of the salsa into the bottom of your slow cooker, creating a moist base for the fajitas.
  3. Layer half of the sliced bell peppers and onions over the salsa, followed by all the minced garlic.
  4. Evenly place the sliced chicken on top of the vegetable layer.
  5. Sprinkle the fajita seasoning and chili powder over the chicken, mixing lightly to ensure every strip is coated.
  6. Carefully layer the remaining salsa, bell peppers, and onions on top of the chicken. Squeeze the lime juice over the top.
  7. Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours.
  8. Once cooked, use two forks to shred the chicken right inside the crockpot.
  9. Switch the crockpot to the warm setting until you’re ready to serve.
