For the Sauce and Seasoning
  • 3 cups Marinara Sauce Can be homemade
  • 1 teaspoon Dried Thyme Essential for seasoning
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease your baking dish with olive oil.
  3. Cook the lasagna noodles until al dente, about 8-10 minutes.
  4. In a skillet, heat olive oil over medium heat and sauté chopped onion until translucent.
  5. Add minced garlic and cook for an additional minute.
  6. Add sliced mushrooms, dried thyme, salt, and pepper; cook until tender.
  7. Stir in fresh spinach and cook until wilted.
  8. Spread a thin layer of marinara sauce in the baking dish, lay down noodles, and layer ricotta, mushroom mixture, and mozzarella.
  9. Repeat layers with remaining ingredients, finishing with noodles and marinara.
  10. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
  11. Let cool for 10 minutes before slicing and serving.
