Prepare the Crust
- Mix graham cracker crumbs and melted unsalted butter until blended. Press into the bottom of a greased 9-inch springform pan. Chill in the refrigerator.
Make the Cheesecake Filling
- Beat cream cheese until smooth. Gradually add sugar and cornstarch, mixing on low speed. Add eggs and extra yolk carefully, then mix in sour cream, lemon juice, and vanilla extract until combined.
Bake the Cheesecake
- Pour filling into the crust. Place pan inside a roasting pan, add boiling water to the roasting pan until halfway up the sides. Bake at 302°F (150°C) for 30 to 45 minutes.
Cool the Cheesecake
- Turn off the oven and leave the door ajar. Cool cheesecake in the oven for 1 hour, then transfer to the refrigerator to chill overnight.
