Method
 

Cupcake Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Beat together butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Mix wet ingredients: champagne, milk, vanilla, and peach puree in a separate bowl.
  6. Combine wet and dry ingredients with the butter mixture, mixing gently.
  7. Fill muffin liners 2/3 full and bake for 18-20 minutes. Cool in pan for 5 minutes, then transfer to wire rack.
Buttercream Frosting
  1. Beat butter until creamy, then gradually add powdered sugar until smooth.
  2. Fold in peach puree, champagne, and a pinch of salt. Beat until fluffy.
  3. Once cupcakes are cool, pipe the frosting onto each cupcake.
  4. Garnish with peach slices and sparkling sugar.
