Method
 

Cooking Instructions
  1. Pat the pork tenderloin dry with paper towels and season generously with salt and pepper.
  2. Heat a skillet over medium-high heat and add butter or oil. Sear the pork tenderloin for 2-3 minutes on each side until golden brown.
  3. Transfer the skillet to a preheated oven at 400°F and roast for 15-20 minutes until the internal temperature reaches 145°F.
  4. Remove the pork from the oven and let it rest for about 5 minutes.
  5. In the same skillet, add more butter if necessary and sauté minced garlic for 30 seconds until fragrant.
  6. Pour in chicken broth and scrape any browned bits off the bottom of the skillet. Let it simmer for a minute.
  7. Stir in heavy cream and Dijon mustard, reduce heat and simmer for 3-5 minutes until slightly thickened.
  8. Slice the rested pork and drizzle the creamy Dijon sauce over the top. Garnish with fresh herbs and serve.
