- Pat the pork tenderloin dry with paper towels and season generously with salt and pepper.
- Heat a skillet over medium-high heat and add butter or oil. Sear the pork tenderloin for 2-3 minutes on each side until golden brown.
- Transfer the skillet to a preheated oven at 400°F and roast for 15-20 minutes until the internal temperature reaches 145°F.
- Remove the pork from the oven and let it rest for about 5 minutes.
- In the same skillet, add more butter if necessary and sauté minced garlic for 30 seconds until fragrant.
- Pour in chicken broth and scrape any browned bits off the bottom of the skillet. Let it simmer for a minute.
- Stir in heavy cream and Dijon mustard, reduce heat and simmer for 3-5 minutes until slightly thickened.
- Slice the rested pork and drizzle the creamy Dijon sauce over the top. Garnish with fresh herbs and serve.
