Ingredients
  

For the Sweet Potatoes
  • 4 medium Sweet Potatoes You can substitute with butternut squash for a different flavor.
For the Filling
  • 1 pound Ground Turkey Feel free to swap with ground chicken or a plant-based alternative.
  • 1 can Black Beans Canned or cooked dried beans can be used.
For Topping
  • 1 cup Cheese Any cheese that melts well, like cheddar or pepper jack.
  • Avocado/Sour Cream Optional; substitute with Greek yogurt for added protein.
  • Green Onions Optional; can be omitted.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Wash and pierce the sweet potatoes with a fork to allow steam to escape. Place them on a baking sheet and bake for 45 to 60 minutes, or until they are fork-tender and slightly caramelized on the outside.
  2. While the sweet potatoes are baking, heat a skillet over medium heat and add your ground turkey. Cook it for about 7-10 minutes, breaking it up with a spatula until it turns golden brown and is fully cooked through. Season with your favorite spices.
  3. Once the ground turkey is cooked, drain and rinse the black beans, then stir them into the skillet with the turkey. Cook for an additional 2-3 minutes.
  4. Once the sweet potatoes are finished baking, let them cool slightly. Carefully slice each sweet potato lengthwise down the center, fluff the insides with a fork, and fill each boat with the turkey and black bean mixture.
  5. Sprinkle a generous amount of cheese over the filled sweet potatoes and place them back into the oven for an additional 5-10 minutes, until the cheese has melted and is bubbling.
  6. Remove from the oven and serve each boat with your choice of toppings, such as avocado, sour cream, or green onions.
