- Slice the chicken breasts or thighs into bite-sized pieces, season with salt, black pepper, and Italian seasoning. Set aside.
- In a large skillet, heat 2 tablespoons of olive oil or butter over medium-high heat. Add the chicken and cook for 6-8 minutes until golden brown and cooked through.
- In the same skillet, add more oil if necessary, and toss in minced garlic. Sauté for about 30 seconds until fragrant.
- Pour in heavy cream and cream cheese, stirring continuously until smooth and simmering. Then, add chicken broth to loosen the sauce.
- Slowly whisk in Parmesan cheese until melted and sauce thickens, about 2-4 minutes.

- Add zucchini noodles to the skillet and gently mix to coat them in the sauce. Cook for an additional 2-3 minutes.
