Ingredients
  

For the Chicken Filling
  • 1 pound Chicken Thighs Can substitute with chicken breasts for a leaner option.
  • 2 tablespoons Olive Oil Vegetable oil can be used as a substitute.
  • 2 cloves Garlic (minced) Use fresh minced garlic for the best flavor.
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Paprika
  • 1/4 teaspoon Cayenne Pepper Adjust to taste.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Black Pepper Adjust according to taste.
For the Taco Sauce
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Sugar Honey or maple syrup can be used as alternatives.
  • 1/2 cup Chicken Broth Vegetable broth can be used as a substitute.
  • 1 tablespoon Lime Juice Lemon juice or vinegar can be substituted.
For Serving
  • 8 count Taco Shells or Tortillas Use soft tortillas or crispy taco shells.
  • Toppings Diced Tomato, Onion, Avocado, Cilantro, Lettuce, Shredded Cheese, Sour Cream.

Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, combine the minced garlic, onion powder, dried oregano, cumin powder, paprika, cayenne pepper, salt, and black pepper. Add 2 tablespoons of chicken broth to help form a loose paste.
  2. Coat the chicken thighs thoroughly with the prepared taco seasoning mixture and set aside.
  3. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the seasoned chicken thighs and sear for 3 minutes per side until golden brown.
  4. Remove the chicken and pour in the remaining chicken broth, tomato paste, and sugar in the skillet. Stir and bring to a simmer.
  5. Chop or shred the seared chicken and return it to the skillet. Allow it to simmer together for 2-3 minutes.
  6. Warm taco shells or tortillas in a separate skillet or oven. Fill each taco shell with the chicken mixture.
  7. Top with diced tomatoes, avocado, shredded lettuce, cilantro, and cheese. Serve immediately.
