- In a mixing bowl, combine the minced garlic, onion powder, dried oregano, cumin powder, paprika, cayenne pepper, salt, and black pepper. Add 2 tablespoons of chicken broth to help form a loose paste.
- Coat the chicken thighs thoroughly with the prepared taco seasoning mixture and set aside.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the seasoned chicken thighs and sear for 3 minutes per side until golden brown.
- Remove the chicken and pour in the remaining chicken broth, tomato paste, and sugar in the skillet. Stir and bring to a simmer.
- Chop or shred the seared chicken and return it to the skillet. Allow it to simmer together for 2-3 minutes.
- Warm taco shells or tortillas in a separate skillet or oven. Fill each taco shell with the chicken mixture.
- Top with diced tomatoes, avocado, shredded lettuce, cilantro, and cheese. Serve immediately.
