Step‑by‑Step Instructions for Drunken Noodles
  1. In a small bowl, whisk together oyster sauce, light soy sauce, dark soy sauce, fish sauce, and brown sugar until well combined. Set aside.
  2. Slice chicken thigh into thin strips, add dark soy sauce, and marinate for about 5 minutes.
  3. Mince garlic and chili peppers until a fine paste forms.
  4. Prepare fresh rice noodles by slicing them into sections or rehydrate dried noodles.
  5. Heat oil in a large pan, add garlic and chili mixture, stir for 30 seconds, then add chicken and cook until golden.
