  • 2 whole English Cucumbers Sliced into ¼-inch rounds
  • 1 whole Red Onion Finely chopped
  • 8 oz Rotini Pasta Cooked until al dente
  • 1 cup Cherry Tomatoes Halved or substituted with diced bell peppers
  • 0.25 cup Fresh Parsley Chopped, used as a garnish
For the Dressing
  • 0.5 cup Mayonnaise Can substitute half with buttermilk
  • 0.25 cup Sour Cream Can be reduced or swapped with yogurt
  • 1 tbsp Dried Dill Can use fresh dill or omit
  • 1 tsp Garlic Powder To taste
  • 1 tsp Onion Powder To taste
For Toppings
  • 1 cup Shredded Cheddar Cheese Freshly grated
  • 0.5 cup Cooked Bacon Crumbled or pre-cooked bacon bits

Method
 

Preparation
  1. Wash and dry cucumbers, then slice into ¼-inch rounds.
  2. Finely chop red onion and add to bowl with cucumbers.
  3. Cook rotini pasta in boiling salted water for 8-10 minutes until al dente, then cool under cold water.
  4. In a mixing bowl, whisk together mayonnaise, sour cream, dill, garlic powder, and onion powder. Season to taste.
  5. In a large bowl, combine cooked rotini, cucumbers, red onion, cherry tomatoes, and parsley. Gently mix.
  6. Pour dressing over salad mixture and fold gently to coat ingredients evenly.
  7. Mix in cheddar cheese and cooked bacon gently.
  8. Cover and chill for at least 30 minutes to meld flavors.
  9. Before serving, give the salad a gentle stir and garnish with additional parsley and bacon.
