Step-by-Step Instructions
  1. Fill a large pot with salted water and bring it to a boil. Add the tortellini and cook according to package instructions. Drain and rinse with cold water.
  2. In a large mixing bowl, combine diced salami, cubed mozzarella, halved cherry tomatoes, chopped cucumber, diced red bell pepper, and sliced red onion. Add olives if desired.
  3. Add cooled tortellini to the mixture, drizzle with Italian dressing, and toss gently to combine.
  4. Season with salt and pepper to taste, cover, and refrigerate for about 10 minutes.
