Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, whisk together 4 large eggs, a pinch of salt, a dash of pepper, and 2 tablespoons of milk until smooth and frothy.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Once melted, pour in the egg mixture and stir gently until just set but still moist.
  3. In the same skillet, add 4 breakfast sausage links over medium heat and cook for about 6-8 minutes, turning occasionally until fully cooked through.
  4. Spray a clean skillet with cooking spray and warm it over medium heat for about 1-2 minutes until just warm.
  5. Lay one tortilla flat and add a generous spoonful of scrambled eggs in the center, then place half a sausage link and sprinkle with cheddar cheese.
  6. Carefully roll the tortilla tightly around the filling, folding in the sides to encase the mixture.
  7. Place the rolled tortilla seam-side down in the skillet and cook for about 2-3 minutes until golden brown.
  8. Flip the roll-up to the other side and cook for an additional 2-3 minutes until it is golden brown.
