Method
 

Preparation Steps
  1. In a medium bowl, whisk together olive oil, lemon juice, salt, pepper, oregano, and garlic powder. Set aside.
  2. Flatten chicken breasts to 1/2 inch thickness and marinate in the refrigerate for at least 30 minutes.
  3. Combine Greek yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice for tzatziki sauce. Chill.
  4. Cook rice or quinoa per instructions until tender.
  5. Preheat air fryer to 380°F and cook marinated chicken for 10-11 minutes, flipping halfway, until cooked through.
  6. Let cooked chicken rest for 5 minutes before slicing.
  7. Assemble bowls with base, veggies, sliced chicken, and tzatziki sauce, then drizzle with olive oil and lemon.
