Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts substitute with turkey or chickpeas for vegetarian option
  • 2 tablespoons Olive Oil use extra virgin for better flavor
  • 3 cloves Garlic fresh, minced
  • 2 tablespoons Lemon Juice freshly squeezed

For the Base
  • 2 cups Rice or Quinoa substitute with couscous or farro if desired
  • 2 cups Fresh Vegetables (tomatoes, cucumbers, bell peppers) use seasonal for best quality
For the Tzatziki
  • 1 cup Greek Yogurt substitute with dairy-free alternative if needed
  • 1 cup Cucumber grated
  • 1 tablespoon Dill chopped
  • 1 clove Garlic minced
  • 1 tablespoon Lemon Juice freshly squeezed

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together olive oil, minced garlic, freshly squeezed lemon juice, salt, and pepper until well combined. Pound the chicken breasts to ½ inch thickness, marinate for at least 30 minutes.
  2. While the chicken is marinating, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice in another bowl. Mix thoroughly and let chill in the fridge for at least 15 minutes.
  3. Rinse and cook rice or quinoa according to package instructions, usually boiling in water for about 15-20 minutes until tender. Fluff with a fork once cooked.
  4. Preheat air fryer to 380°F. Cook marinated chicken for 7 minutes on one side, flip and cook for another 3-4 minutes until the internal temperature reaches 165°F.
  5. Remove chicken from the air fryer, let it rest for about 5 minutes, slice into strips, and assemble your bowls with a scoop of rice or quinoa, sliced chicken, and fresh vegetables.
  6. Drizzle homemade tzatziki generously over the assembled bowls, finish with olive oil and lemon juice, serve immediately.
