For the Kofta

  • 2 tablespoons Lemon Juice Adds brightness
  • 1 tablespoon Olive Oil Balances acidity
  • 1 teaspoon Cumin Part of spice blend
  • 1 teaspoon Coriander Part of spice blend
  • 1 teaspoon Paprika Part of spice blend
  • to taste Salt
  • to taste Pepper
For Serving
  • 4 pieces Pita Bread For wrapping
  • 1 cup Tzatziki Sauce Creamy dip
  • 2 cups Cucumber-Tomato Salad Fresh veggie side

Method
 

Preparation Steps
  1. In a small bowl, combine milk with breadcrumbs and let sit for about 5 minutes.
  2. In a large mixing bowl, combine soaked breadcrumbs with ground chicken, onion, parsley, garlic, egg, lemon juice, olive oil, and spices. Mix until combined.
  3. Form mixture into oval patties, about 2-3 inches long, and chill for 20-30 minutes.
  4. Preheat grill to medium-high heat, around 400°F to 450°F.
  5. Skewer chilled patties onto flat skewers and grill for 10-12 minutes, turning occasionally, until browned and at an internal temperature of 165°F.
  6. Remove from the grill, let rest for a few minutes, and serve with pita, tzatziki, and salad.
