Marination and Cooking
  1. In a large bowl, combine your boneless chicken thighs with paprika, cumin, salt, black pepper, and one minced garlic clove. Mix well to coat the chicken thoroughly with the spices, allowing to marinate for 15 to 20 minutes.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Once the oil shimmers, add the marinated chicken thighs and cook for 6 to 8 minutes until golden brown and reach an internal temperature of 165°F. Remove and set aside.
  3. Lower the heat to medium and melt 2 tablespoons of butter in the same skillet. Add chopped onion and remaining minced garlic, sautéing for 3 to 4 minutes until onions are translucent.
  4. Pour in 1 cup of chicken broth and the juice of half a lemon, scraping the bottom of the skillet. Gradually stir in 1 cup of plain yogurt and 1/2 cup of heavy cream on low heat to avoid curdling.
  5. Stir in 2 tablespoons of chopped fresh dill, then return the cooked chicken thighs to the skillet and let simmer for an additional 5 minutes.
  6. Before serving, taste the sauce and adjust salt and pepper as needed. Plate the chicken and sauce, garnishing with extra dill or parsley.
