Step-by-Step Instructions for Burger Bowls
  1. Rinse 1 cup of brown rice under cold water, then combine it with 2 cups of water in a medium saucepan. Bring to a boil, cover, and reduce to a simmer. Cook for about 30 minutes until tender.
  2. In a large skillet, heat a drizzle of oil over medium heat. Add 1 pound of lean ground beef, breaking it apart as it cooks. Season with salt and pepper and brown for about 8 minutes.
  3. While the beef is browning, wash and chop 1 cup of cherry tomatoes and shred 2 cups of lettuce. Slice up 1/2 cup of pickles.
  4. In each serving bowl, start with a scoop of the cooked brown rice. Layer on the cooked ground beef, followed by the shredded lettuce, halved cherry tomatoes, and sliced pickles.
