- In a large bowl, whisk together the olive oil, lime juice, soy sauce, Mexican chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and honey until well combined.
- Add the cubed chicken breast to the marinade in the bowl, using tongs or a spatula to ensure each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat, approximately 375–400°F. Lightly oil the grill grates.
- Retrieve the marinated chicken from the refrigerator and soak wooden skewers in water for at least 30 minutes. Thread the chicken cubes onto the skewers.
- Place the skewers on the preheated grill and cook for 10–15 minutes, turning them occasionally. Ensure the internal temperature reaches 165°F.
