Method
 

Step-by-Step Instructions
  1. In a large bowl, whisk together the olive oil, lime juice, soy sauce, Mexican chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and honey until well combined.
  2. Add the cubed chicken breast to the marinade in the bowl, using tongs or a spatula to ensure each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  3. Preheat your grill to medium-high heat, approximately 375–400°F. Lightly oil the grill grates.
  4. Retrieve the marinated chicken from the refrigerator and soak wooden skewers in water for at least 30 minutes. Thread the chicken cubes onto the skewers.
  5. Place the skewers on the preheated grill and cook for 10–15 minutes, turning them occasionally. Ensure the internal temperature reaches 165°F.
  6. Remove the skewers from the heat and let them rest for a few minutes. Garnish with fresh cilantro and serve with lime wedges.
