Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Pat the chicken breasts dry and season with salt, pepper, oregano, and thyme.
  3. Heat olive oil in a skillet, add minced garlic and sauté for 30 seconds, then add chopped red bell peppers and cook for 2-3 minutes.
  4. Incorporate halved cherry tomatoes and pitted olives, cooking for 5 minutes.
  5. Transfer the seasoned chicken to the baking dish, add the sautéed vegetable mixture, and crumble feta cheese on top.
  6. Cover with foil and bake for 25 minutes. Remove the foil and bake an additional 10-15 minutes until the chicken reaches 165°F (75°C).
