  • 1 tbsp Dried Oregano Fresh herbs can be used.
  • 15 oz Ricotta Cheese Cottage cheese can be a substitute.
  • 2 cups Shredded Mozzarella Cheese Consider a blend of cheeses.
  • ½ cup Grated Parmesan Cheese Using fresh is recommended.
  • 2 cups Fresh Spinach Can substitute with thawed frozen spinach, well-drained.
  • 1 large Egg Or use a flax egg for vegan option.

  • 1 cup Green Salad

Step-by-Step Instructions
  1. Cook Lasagna Sheets: Boil salted water and cook lasagna sheets according to package instructions until al dente, about 8-10 minutes.
  2. Prepare the Meat Sauce: Sauté chopped onion in olive oil until translucent, add Italian sausage, garlic, and herbs. Pour in canned tomato sauce and simmer for 10-15 minutes.
  3. Preheat the Oven: Preheat oven to 350°F (175°C).
  4. Make the Ricotta Filling: In a mixing bowl, combine ricotta cheese, egg, Parmesan, mozzarella, and spinach. Mix until well combined.
  5. Assemble the Roll Ups: Spread a layer of meat sauce in a baking dish. Lay a lasagna sheet, fill with ricotta mixture and meat sauce, then roll up and place seam-side down.
  6. Top with Sauce and Cheese: Pour remaining meat sauce over the roll ups, sprinkle with mozzarella and Parmesan, and cover tightly with foil.
  7. Bake to Perfection: Bake covered for 40 minutes, then uncover and bake for another 5 minutes until cheese is golden brown.
